Veggie Smoothies
If you’re looking for a way to get more veggies yourself, or for your kids to eat more, try these surprisingly delicious smoothies!
Veggie Smoothies
- 3 cups sugar-free drink mix, prepared (we like apple or strawberry, but any flavor will work)
- 1 cup frozen strawberries
- 1/2 cup frozen broccoli florets
Put all ingredients in a blender and blend about 3 minutes, until very smooth. Last night, we replaced the broccoli with carrots and that was amazing too! This will serve 2-4 people, depending on how big a smoothie you want.

Monday morning
Breakfast this morning is steel-cut oats, mixed with your favorite fruit and some protein powder. I don’t know about you, but I had never tried these before last week, and I loved them! This will definitely be a regular on my own personal breakfast menu!
For snacks, pick two of your favorites, anything that fits your plan. Remember, there’s never a reason to be hungry!

Spinach and Artichoke Dip
For Robin’s Snackalicious Super Dishes carnival, I bring you this yummy and healthy dip. My kids ate it with gusto, which is amazing considering the spinach. Right there you know it’s got to be good!
Spinach and Artichoke Dip
- 1 can artichoke hearts, drained, finely chopped
- 1 package frozen chopped spinach, thawed and drained
- 3/4 cup Parmesan cheese
- 3/4 cup low-fat mayo
- 1/2 cup shredded fat-free mozzarella cheese
- 1 tsp. garlic powder
Preheat oven to 350. Combine all ingredients until well blended. Transfer to a baking dish or pie plate. Bake 20 minutes. Serve with your favorite crackers, celery sticks, baby carrots, or toast.

Friday’s breakfast and snacks
Phew! Our internet was out for a while and I was afraid I wouldn’t get this posted before morning!
Breakfast is 2 eggs and 3 strips of turkey bacon. Snacks for tomorrow are yogurt with fruit, and an apple with a handful of almonds.
Check back later for my snack food entry – you need something you can eat on game day, right?

Wednesday breakfast, lunch and snacks
I’ve got to take the boys to the dentist tomorrow, so here’s the whole morning and afternoon’s menu!
Breakfast is the famous Banana-Walnut Shake. Snacks tomorrow are an apple with string cheese, and a piece of fruit – your choice.
Lunch is:
Tuna-Stuffed Tomato
- 1 tomato
- 1 can tuna
- 1 stalk diced celery
- 1 tsp relish
- 1 Tbsp low-fat mayo
- sunflower seeds
Combine the tuna with the celery, relish and mayo. Core the tomato and hollow out the seeds. Stuff the tomato with the tuna mixture and sprinkle with sunflower seeds.

Veggie Frittata
Breakfast this morning is another favorite of mine. Make sure you have an oven-proof skillet (no rubber or plastic parts).
Veggie Frittata
- 3 eggs
- 1/2 cup of chopped veggies – whatever you like – onions and peppers are good
- 1 Tbsp olive oil
- Salt and pepper to taste
Saute the veggies in olive oil until soft. In a separate container, scramble the eggs. When the veggies are ready, pour the eggs over them. Don’t stir, just heat until the eggs are set on the bottom. Meanwhile, turn on the oven broiler. As soon as the eggs are set on the bottom, transfer the skillet to the oven. Leave under the broiler until the top of the eggs is set. Invert onto a plate to serve.
Snacks tomorrow are cottage cheese with fruit, and a celery stick with cheese.

Breakfast and snacks for Monday
This morning, we’re going to have a piece of fruit, you pick, cut up in cottage cheese, and sprinkled with Bran Buds. You can have an extra piece of fruit on the side if you want.
Snacks today are an apple with yogurt dip, and a protein bar. Enjoy!

Friday breakfast and snacks
Breakfast is a yummy fruit smoothie.
- 1 cup milk
- 1 oz. protein powder
- 1 cup fruit (I like to use strawberries and bananas)
Blend until smooth and enjoy!
Our snacks tomorrow are one cup of sugar-free yogurt, and an apple and cheese wedge. Alternately, you could have string cheese, but I like spreading the Laughing Cow cheese on the apple slices.

Thursday breakfast and snacks
For breakfast this morning, we’re having a cup of cottage cheese with fruit. Whatever your favorite fruit is, chop it up and stir it into the cottage cheese. Then sprinkle it with Bran Buds, which add a nice crunch. Yum!
Our snacks today are an apple with a handful of almonds (and by handful I mean a small handful, not a fistful!), and a protein bar.
