White Chicken Soup
I modified a recipe I found in one of my favorite cooking magazines and came up with this delicious soup. So good, everyone had seconds and everyone wanted thirds!
- 1 40 oz. can navy beans, drained
- 2 10 oz. cans white meat chicken, drained
- 1 1/2 cups skim milk
- 1 tsp salt-free seasoning
- 1 cup fat-free sour cream
- 1 tsp Cayenne, or more to taste
- 1 cup shredded Mexican blend cheese
Add all ingredients except cheese to a large stockpot. Heat over medium-high heat until just boiling. Add the cheese and stir until melted. Serve hot. Approximately 8 servings.

Naked Taco
Lunch today!
Naked Taco
- 1 boneless chicken breast, cut into chunks
- chili powder, cumin, oregano, to taste
- shredded lettuce or salad greens
- fat-free sour cream
- salsa
Cook the chicken in olive oil until done, seasoning to taste. Serve over salad greens/lettuce, and top with sour cream and salsa.

Thursday breakfast and lunch
Oops – I kind of forgot to post earlier. Sorry!
Breakfast today is 2 eggs and three strips of turkey bacon.
Lunch is:
Breadless Sandwich
- 2 slices deli turkey or chicken
- low-fat or fat-free mayo
- lettuce
- tomato
- 1 carrot, shredded
Combine all ingredients except the meat, then layer the meat on top. Eat with a fork and knife.

Tuesday breakfast and lunch
Quick breakfast today – it’s Tuesday and that means homeschool co-op. So I’m having a Banana-Walnut Shake. And here’s lunch:
Antipasto Salad
- 3 slices deli ham
- 1/2 red pepper, sliced
- 1 tomato, sliced
- 1 cucumber, sliced
- 1 can garbanzo beans
- 1/4 cup mozzarella cheese, shredded
- salad greens
Arrange ingredients on top of lettuce. Drizzle with olive oil and sprinkle with Parmesan cheese.

Tuna Salad
For today’s lunch, we’re going to have tuna salad. If you like, and if you have any around, you can have a wrap using a whole-grain tortilla instead of serving the tuna on lettuce.

BLT Salad
BLT Salad
- 4 slices turkey bacon, chopped
- salad greens
- 1 tomato, diced
- 1 sliced whole grain bread
- low-fat mayo
Fry the turkey bacon pieces until nice and crisp. Meanwhile, cover a plate with salad greens. Sprinkle bacon and diced tomato over the salad. Toast the slice of bread, then thinly spread mayo on one side. Cut the toast into bite-size bits and sprinkle over the salad. Enjoy!
