Friday breakfast
This morning, I’m having a cup of cottage cheese mixed with fruit and some Bran Buds, which add a nice crunch!

Thursday breakfast and lunch
Oops – I kind of forgot to post earlier. Sorry!
Breakfast today is 2 eggs and three strips of turkey bacon.
Lunch is:
Breadless Sandwich
- 2 slices deli turkey or chicken
- low-fat or fat-free mayo
- lettuce
- tomato
- 1 carrot, shredded
Combine all ingredients except the meat, then layer the meat on top. Eat with a fork and knife.

Wednesday breakfast
We’re supposed to have snow here today, and what better on a cold winter morning than a nice hot bowl of steel-cut oats? Add some fruit and a scoop of protein powder for a tasty, filling breakfast.

Thursday breakfast
This morning, we’re going to have steel-cut oats with one scoop of protein powder and a fruit of your choice. Mix the fruit in or eat it separately!

Wednesday breakfast
We’re having 2 eggs, prepared however you like, with 3 slices of turkey bacon. Add a slice of whole wheat toast with Smart Balance spread and a fruit of your choice.

Veggie Omelet
Choose two or three of your favorite veggies and finely chop them. Saute them in olive oil until softened, then pour two or three scrambled eggs over the veggies. As the outside edges of the eggs set, push them to the inside, until all the eggs are firm. Sprinkle some cheddar cheese on top if you wish.

Western Omelet
Any type of vegetables can be used, really, so if you don’t like peppers or green onions, feel free to experiment.
Western Omelet
- 2-3 Tbsp chopped green pepper
- 1 green onion, chopped fine
- 2 eggs
- 2 Tbsp shredded cheddar cheese
Saute the pepper and onion in a little olive oil or some cooking spray until softened. In a separate container, scramble the eggs. Pour the eggs over the veggies. When they start to firm on the bottom, sprinkle the cheese over them and then carefully fold one side of the omelet over onto the other side. Cook until done. Enjoy with a piece of fresh fruit or a glass of vegetable juice.
